To kick off the new year, I have a new recipe! Kaley Terras from Corning, Calif., shared with me a spicy and tasty meal. A homemade pot of chili is just what we all need during these cold nights or after coming in from those long practices. It’s not only easy and cheap to make, it’s darn good to eat as well! Also, like she said, chili is easy – add nachos, bacon bits or anything – you can get creative with it! Give it a try, let your creative juices flow and make something you can call your own. Happy new year, everyone!

 Kaley's Homemade Chili

1 or 2 jalapeño chilis (where most of the spice comes from)
1 onion
Saute onion and jalapeños until they are soft. Add those to a pot, then add the following:

A can of kidney beans
A can of pinto beans
About a tablespoon of chili powder
A tablespoon each of salt, white sugar and pepper
(You can do more or less pepper and chili powder, depending on your preference)
1 cup of chicken or beef broth (or 1 of each if you want)
1 small can of tomato paste
1 can of diced tomatoes
1 can of tomato sauce
Bring the pot to a boil, then put a lid on it and let it sit until it reaches desired thickness. I also add cheese and melt it on top, and serve my chili with cheesy garlic bread – but try anything you like to go with it!
